As the weather grows cooler, have you considered growing cool weather herbs? Here are three herbs that are perfect for cool weather. We will cover how to grow them, what you can use them for, and what the health benefits are.

3 Cool-Weather Herbs to Grow

  1. Dill

    Uses: Add dill to your soups and stews or use it for pickling. It also has health benefits like treating fevers, colds, and coughs.

    Planting: While the soil is around 65 degrees, plant your dill seeds about 1/4 of an inch into the soil. The Old Farmer’s Almanac recommends to space this seeds about 18 inches apart.

    After that, rack the seeds into the soil. Around 2 weeks later, you will see your dill plants sprouting. Four weeks after planting, thin the plants make sure their they are only 12-18 inches apart.

    Harvesting: Once you notice about four to five leaves, it’s time to harvest. Simply use scissors to cut them off.

    Planting: Pick a spot in the garden that receives full sun. Plant the seeds about 12-18 inches apart.

    Harvesting: According to Bonnie Plants, cut the leafy stem allowing for the stem to remain around 6 -12 inches long. Do not harvest more than a third of the leaves at a time.

  3. Parsley
    Parsley
    Uses: Parsley makes the perfect addition to any steak or fish dish. It also helps treat urinary tract infections, anemia and high blood pressure.

    Planting
    : Organic Gardening recommends to plant parsley in rich, well-drained soil with partial shade to full sun. Make sure the temperature of the soil is around 50 degrees. Seeds take at least 6 weeks before poking through the surface. Once they do, make sure to thin them out, leaving 9 inches between plants.

    Harvesting: If the plant is growing well it’s time to harvest. Simply snap the stems off of the plants.
